Prerequisites

Basic computer file management knowledge, e.g. opening, saving and uploading files, creating folders, basic word processing skills such as using tables

Materials

1. Computer
2. Word Processing Software (MS Word, Word for Apple, etc.)
3. Internet access
4. Adobe Reader 11.1.01 or later required to edit and save coursework (You can download this software for free at Adobe.com)

Professional Learning Objectives

1. Use course text and guided instruction to document and analyze a record of food intake over a 24-hour period with 100% completion.
2. Use course text and guided instruction to research basic nutrition vocabulary and respond to questions pertaining to how food is processed in your body with 90% accuracy.
3. Use course text and guided instruction to provide responses to basic nutrition facts with 90% accuracy.
4. Use course text and guided instruction to develop a lunch meal for a child with a nutritional deficiency with 100% completion.
5. Use course text and guided instruction to provide an analysis of common food items’ labels with 100% completion.
6. Use course text and guided instruction to provide an analysis and summary of food safety protocols with 100% completion.
7. Use course text and guided instruction to provide and analysis of personal recommended daily allowances and create a three-day menu that utilizes the nutritional information in this unit with 100% completion.
